The way that we eat and produce food isn't always great for the planet -- if every American skipped meat and cheese just one day a week for a year, the greenhouse gas emission savings would be equivalent to taking 7.6 million cars off the road! As part of our #StartWith1Thing initiative, we challenge you to prepare one vegan recipe per week.

We recently caught up with vegan life coach Zachary Koval, who shared one of his favorite recipes for a delicious, protein-rich smoothie:

Plant-Powered Whole Food Bean Shake

  • 1/2 cup cannellini or great northern beans
  • 2 bananas
  • 2 pitted medjool dates (soaked first in hot water)
  • 2 table spoons unsweetened (sustainably sourced) cocoa powder
  • 1 tablespoons chia seeds
  • 2 tablespoons flax
  • 2 tablespoons peanutbutter
  • Soy milk (or other plant based milk)
  • Ice cubes
  • Optional: Plant-based protein powder

Combine all ingredients and blend until smooth.

One small change in our lives can have a huge impact on the world. It's not hard and it's not too late -- but we all need to do it.
